Recipe of the Month for May - BBQ Marinades

With our #GetBritainBBQing campaign now in full swing, we've been busy coming up with the perfect marinade for those of you looking to host a barbecue in the coming weeks. We have chosen to focus on salmon for our main recipe of the month, but below are also our pick of the best BBQ marinades for chicken, pork and beef, because let's face it - BBQ's are for indulging!

Our salmon marinade would also be perfect for cod and there's no need to wait until the weather is good enough to light the barbie either, this will work just as well cooked in the oven - win/win!

To serve 4:

Ingredients:

  • 4 x salmon steaks
  • 2 tbsp olive
  • 4 tbsp soy sauce
  • 2 cloves of garlic
  • A good glug of 'Lingham's' garlic chilli sauce - (a magic ingredient, which has become a store cupboard staple!)
  • 1 tbsp fresh ginger, grated finely

Method:

  1. Mix all the ingredients together and pour over the salmon steaks - marinade for an hour or so and then wrap each individual steak in tin foil just before you're ready to cook them, including a little of the juice.
  2. Cook on the BBQ for approximately 15 minutes, but it is worth keeping an eye on them and checking whether they are cooked regularly, as it is hard to give an exact time when using flame to cook!

This is perfect served with rice and green beans or salad, perhaps alongside a cheeky cocktail (or 2?!) - enjoy :)
